4 large croissants, cut into bite-sized pieces

8 large eggs

2 cups whole milk

1 cup shredded Gruyère cheese

1 cup diced cooked ham or cooked bacon

1 cup fresh spinach, roughly chopped

1/2 cup cherry tomatoes, halved

1 teaspoon Dijon mustard

Salt and pepper to taste

Fresh chives, chopped (for garnish)

Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish.

    Spread the croissant pieces evenly over the bottom of the prepared baking dish.

      In a large bowl, whisk together the eggs, milk, Dijon mustard, salt, and pepper until well combined.

        Pour the egg mixture over the croissant pieces, ensuring they are evenly coated.

          In a separate bowl, mix the cooked ham or bacon, spinach, Gruyère cheese, and cherry tomatoes. Stir them gently into the croissant and egg mixture.

            Press down lightly on the croissant pieces to ensure they absorb the liquid.

              Cover the dish with foil and let it rest in the fridge for at least 30 minutes or overnight for even better flavor absorption.

                When ready to bake, remove the foil and place the dish in the preheated oven. Bake for 30-35 minutes, or until the top is golden brown and puffed up.
