4 cups fresh broccoli florets

1 cup cooked brown rice

1 cup shredded cheddar cheese

1/2 cup grated Parmesan cheese

1 cup cream of mushroom soup (or homemade)

1/2 cup milk

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper, to taste

1/2 cup breadcrumbs

2 tablespoons olive oil

1/4 teaspoon cayenne pepper (optional for heat)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large pot, bring salted water to a boil and blanch the broccoli florets for about 3 minutes, until they are bright green and slightly tender. Drain and set aside.

      In a mixing bowl, combine the cooked brown rice, cheddar cheese, Parmesan cheese, cream of mushroom soup, milk, garlic powder, onion powder, salt, and pepper. Mix well until everything is evenly coated.

        Gently fold the blanched broccoli into the cheese mixture until all ingredients are combined.

          Transfer the broccoli and cheese mixture into a greased 9x13-inch casserole dish.

            In a small bowl, combine the breadcrumbs, olive oil, and cayenne pepper (if using). Mix until the breadcrumbs are well-coated.

              Sprinkle the breadcrumb mixture evenly over the top of the casserole.

                Bake uncovered in the preheated oven for 25–30 minutes, or until the casserole is bubbly and the top is golden brown.

                  Remove from the oven and let it cool for a few minutes before serving.
