4 large russet potatoes

1 cup chopped fresh broccoli florets

1 cup shredded sharp cheddar cheese

1/2 cup sour cream

1/4 cup milk

2 tablespoons butter

1/2 teaspoon garlic powder

Salt and pepper to taste

1/4 cup green onions, finely chopped (for garnish)

Instructions
 

Preheat your oven to 400°F (200°C).

    Wash the potatoes thoroughly and poke a few holes in each with a fork. Place them directly on the oven rack and bake for 45-60 minutes, until tender.

      While the potatoes are baking, steam the broccoli florets for about 5 minutes until bright green and tender. Set aside.

        Once the potatoes are cooked, remove them from the oven and let them cool slightly. Halve each potato lengthwise and scoop out the insides, placing the potato flesh into a large mixing bowl.

          Add the sour cream, milk, butter, garlic powder, and half of the shredded cheddar cheese to the bowl with the potato flesh. Season with salt and pepper, then mash everything together until smooth and creamy.

            Gently fold in the steamed broccoli until evenly distributed.

              Spoon the broccoli and cheddar mixture back into the potato skins, mounding them slightly on top.

                Sprinkle the remaining cheddar cheese over the filled potatoes.

                  Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden.

                    Remove from the oven and garnish with chopped green onions before serving.
