2 cups cooked chicken, shredded

1/2 cup Buffalo sauce (adjust to taste)

1 cup cream cheese, softened

1 cup shredded cheddar cheese

4 green onions, finely chopped

1 package egg roll wrappers

Oil for frying

Mix the Filling: In a large bowl, combine the shredded chicken, Buffalo sauce, cream cheese, shredded cheddar cheese, and chopped green onions. Mix until well combined.

    Prepare the Egg Rolls: Lay an egg roll wrapper on a clean surface with one corner facing you. Place about 2 tablespoons of the chicken mixture in the center of the wrapper.

      Roll the Egg Rolls: Fold the bottom corner over the filling and roll it tightly. Fold in the sides and continue rolling until sealed, using a little water to moisten the edges if necessary to keep them together. Repeat with remaining wrappers and filling.

        Heat the Oil: In a deep skillet or frying pan, heat about 2 inches of oil over medium heat until hot (about 350°F/175°C).

          Fry the Egg Rolls: Carefully add a few egg rolls at a time to the hot oil. Fry for 3-4 minutes, turning occasionally, until golden brown and crispy. Remove them with a slotted spoon and drain on paper towels.

            Serve: Serve hot with ranch or blue cheese dressing for dipping.
