Ingredients

2 cups all-purpose flour

1 cup warm water (110°F)

1 tablespoon active dry yeast

1 teaspoon sugar

1 teaspoon salt

3 tablespoons olive oil

1 cup cooked chicken, shredded

½ cup buffalo sauce (adjust for spice)

1 cup shredded mozzarella cheese

1/2 cup crumbled blue cheese (optional)

2 green onions, finely chopped

Fresh parsley for garnish

Instructions

Prepare the Dough: In a small bowl, combine warm water, sugar, and yeast. Let it sit for about 5-10 minutes until frothy.

Mix the Ingredients: In a large mixing bowl, combine the flour, salt, and 2 tablespoons of olive oil. Make a well in the center and pour in the yeast mixture. Mix until a dough forms.

Knead the Dough: Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

First Rise: Place the dough in an oiled bowl, cover with a kitchen towel, and let it rise in a warm place for about 1 hour or until doubled in size.

Prepare Buffalo Chicken: In a bowl, mix the shredded chicken with buffalo sauce until evenly coated.

Shape the Focaccia: Once the dough has risen, punch it down and transfer it to a greased baking sheet. Pat it out into a rectangle about 1-inch thick. Using your fingers, create dimples all over the surface.

Add Toppings: Scatter the buffalo chicken over the surface of the focaccia; sprinkle mozzarella and blue cheese (if using) on top. Drizzle with the remaining olive oil and sprinkle with chopped green onions.

Second Rise: Cover again with a kitchen towel and let it rise for an additional 30 minutes. During this time, preheat your oven to 400°F (200°C).

Bake: Bake the focaccia in the preheated oven for 20-25 minutes, or until golden brown and cheese is bubbly.

Cool and Serve: Remove from the oven, allow it to cool for about 5 minutes, and garnish with fresh parsley before slicing.

Prep Time: 1 hr 30 mins | Total Time: 2 hrs | Servings: 8 slices

                        - Presentation Tips: Serve warm, cut into squares, and arrange on a platter. You can drizzle a little extra buffalo sauce on top for added flair and serve with blue cheese dressing on the side for dipping!
