1 lb boneless, skinless chicken thighs

1 cup brown rice

1 can black beans, drained and rinsed

1 cup corn, fresh or frozen

1 red bell pepper, diced

1 avocado, diced

1 cup cherry tomatoes, halved

1/4 cup chopped fresh cilantro

Juice of 2 limes

2 teaspoons cumin

2 teaspoons chili powder

Salt and pepper to taste

2 tablespoons olive oil

1/2 cup shredded cheese (cheddar or Mexican blend)

Sour cream (optional, for serving)

Instructions
 

Cook the Rice: Rinse the brown rice under cold water. In a pot, combine the rinsed rice with 2 cups of water. Bring to a boil, then cover and reduce to a simmer. Cook for about 25-30 minutes or until the rice is tender and water is absorbed. Fluff with a fork once done.

    Marinate the Chicken: In a bowl, combine the olive oil, lime juice, cumin, chili powder, salt, and pepper. Place the chicken thighs in the marinade, ensuring they are well coated. Let it marinate for at least 15-20 minutes (or longer if time allows).

      Cook the Chicken: Heat a skillet over medium-high heat. Once hot, add the marinated chicken thighs. Cook for about 5-7 minutes on each side until the chicken is cooked through and has a nice char. The internal temperature should reach 165°F (75°C). Remove from the skillet and let it rest before slicing.

        Prepare the Vegetables: In the same skillet, add the diced red bell pepper and corn. Sauté for about 3-5 minutes until the bell pepper is tender. Add the black beans and stir until warmed through.

          Assemble the Bowls: In serving bowls, layer the brown rice first, then top with the sautéed vegetable mixture, sliced chicken, diced avocado, halved cherry tomatoes, and a sprinkle of shredded cheese.

            Garnish: Top each bowl with a generous sprinkle of chopped cilantro and a dollop of sour cream if desired. Squeeze additional lime juice on top for an extra kick.
