Butter Poached Lobster Tails

4 lobster tails (6-8 ounces each)

1 cup unsalted butter

2 cloves garlic, minced

1 tablespoon fresh lemon juice

1 teaspoon fresh thyme leaves

Salt and white pepper to taste

Fresh lemon wedges for serving

Instructions
 

Begin by bringing a large pot of water to a simmer over medium heat. Cut the top shell of the lobster tails down the center, being careful not to cut through the meat. Gently pry open the shell, exposing the lobster meat.

    In a small saucepan, melt the unsalted butter over low heat. Add the minced garlic, fresh lemon juice, and thyme leaves to the melted butter, stirring gently until combined.

      Once the butter infusion is ready, reduce the heat to low. Place the prepared lobster tails into the pan with the melted garlic butter. The tails should be partially submerged in the butter mixture, so ensure there’s enough butter to cover at least half of the lobster.

        Poach the lobster tails for about 10-12 minutes, or until the meat is opaque and firm but not overcooked. Be sure to turn the tails halfway through to ensure even cooking.

          Using tongs, carefully remove the lobster tails from the butter and place them on a serving platter. Drizzle some of the infused garlic butter over the lobster meat, and season with salt and white pepper to taste.

            Serve immediately with fresh lemon wedges on the side for a refreshing zing.
