4 large russet potatoes, peeled and diced

1 medium onion, finely chopped

2 cloves garlic, minced

1 green bell pepper, chopped

1 celery stalk, chopped

4 cups vegetable broth

1 cup heavy cream

2 tablespoons Cajun seasoning

1 teaspoon smoked paprika

1 teaspoon thyme

1 bay leaf

2 tablespoons olive oil

Salt and pepper to taste

Chopped green onions for garnish

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, green bell pepper, and celery, sautéing for about 5 minutes or until softened.

    Stir in the diced potatoes, Cajun seasoning, smoked paprika, thyme, and bay leaf. Cook for an additional 2-3 minutes to let the spices toast.

      Pour in the vegetable broth and bring the mixture to a boil. Once boiling, reduce the heat to a simmer, cover, and let it cook for 20-25 minutes or until the potatoes are tender.

        Remove the bay leaf from the soup and use an immersion blender to blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup and leave the rest as is.

          Stir in the heavy cream and let simmer for another 5 minutes, adjusting the seasoning with salt and pepper to taste.

            Ladle the soup into bowls and garnish with chopped green onions before serving.
