4 medium-sized russet potatoes, peeled and diced

1 large onion, chopped

2 cloves garlic, minced

1 green bell pepper, diced

2 stalks celery, diced

4 cups vegetable broth

1 cup heavy cream

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

2 tablespoons olive oil

Salt and pepper to taste

1/2 cup green onions, chopped (for garnish)

1/2 cup shredded cheddar cheese (optional, for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion, garlic, green bell pepper, and celery. Sauté for about 5 minutes, or until the vegetables begin to soften.

    Add the diced potatoes to the pot and stir to combine. Sprinkle in the Cajun seasoning and smoked paprika; mix well. Cook for another 2-3 minutes until the spices are fragrant.

      Pour in the vegetable broth, bringing the mixture to a boil. Once boiling, reduce the heat to a simmer and cover the pot. Allow it to simmer for about 20 minutes, or until the potatoes are tender.

        Once the potatoes are cooked, use a potato masher to partially mash the soup, leaving some chunks for texture.

          Stir in the heavy cream and season with salt and pepper to taste. Allow the soup to heat through for an additional 5 minutes, stirring occasionally.

            Taste and adjust the seasonings if needed, adding more Cajun seasoning for extra kick if desired.

              Ladle the soup into bowls, garnishing with chopped green onions and shredded cheddar cheese if desired.
