In a large bowl, combine halved baby potatoes with olive oil, Cajun seasoning, smoked paprika, salt, and pepper. Toss until the potatoes are well coated.
Place the seasoned potatoes in the slow cooker.
Add diced onion, minced garlic, and bell pepper on top of the potatoes.
Pour the vegetable broth into the slow cooker, making sure not to disturb the seasoned potatoes too much.
Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours, until potatoes are tender.
Once done, carefully stir the mixture, then taste and adjust seasoning if necessary.
Serve hot, garnished with freshly chopped parsley for a pop of color and freshness.
