For the Cheesecake Layer:

16 oz cream cheese, softened

1 cup granulated sugar

1 teaspoon vanilla extract

2 large eggs

1 cup sour cream

For the Apple Layer:

3 medium apples, peeled and diced (Granny Smith or Honeycrisp)

2 tablespoons brown sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

For the Crisp Topping:

1 cup rolled oats

1 cup all-purpose flour

1/2 cup brown sugar

1/4 cup granulated sugar

1/2 teaspoon baking powder

1/2 cup cold unsalted butter, cubed

For Drizzling:

Caramel sauce (store-bought or homemade)

Instructions
 

Preheat the oven to 350°F (175°C). Line a 9x13-inch baking pan with parchment paper, leaving some overhang for easy removal later.

    Prepare the Cheesecake Layer: In a large mixing bowl, beat the softened cream cheese with granulated sugar and vanilla extract until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Finally, mix in the sour cream until fully combined. Set aside.

      Prepare the Apple Layer: In a separate bowl, combine the diced apples with brown sugar, ground cinnamon, and lemon juice. Toss well to coat the apples evenly.

        Prepare the Crisp Topping: In another bowl, mix together the oats, flour, brown sugar, granulated sugar, and baking powder. Add the cold butter cubes and use a pastry cutter or your fingers to work the butter into the dry ingredients until crumbly and well combined.

          Assemble the Bars: Pour the cheesecake mixture into the prepared baking pan, spreading it evenly. Next, layer the apple mixture over the cheesecake, spreading it gently. Finally, sprinkle the crisp topping evenly over the apple layer.

            Bake: Place the pan in the preheated oven and bake for 35-40 minutes, or until the cheesecake is set and the topping is golden brown. Check for doneness by lightly shaking the pan – the center should not be jiggly.

              Cool Down: Once baked, remove from the oven and let it cool at room temperature for about 30 minutes before placing in the refrigerator. Chill for at least 2 hours for the best texture.

                Serve: Once chilled, lift the bars out of the pan using the parchment overhang. Cut into squares and drizzle with caramel sauce before serving.
