2 pounds beef chuck, cut into 1-inch cubes

1 large onion, diced

4 cloves garlic, minced

2 bell peppers (red and green), chopped

2 medium tomatoes, diced

2 cups beef broth

2 tablespoons tomato paste

1 tablespoon ground cumin

1 tablespoon chili powder

1 teaspoon smoked paprika

2 bay leaves

Salt and pepper to taste

3 tablespoons olive oil

Fresh cilantro, chopped (for garnish)

Avocado slices (for serving)

Warm tortillas (for serving)

Instructions
 

In a large pot or Dutch oven, heat the olive oil over medium-high heat.

    Season the beef cubes with salt and pepper, then add them to the pot. Brown the beef on all sides, about 5-7 minutes. Remove the beef and set aside.

      In the same pot, add the diced onion, garlic, and bell peppers. Sauté until softened, about 5 minutes.

        Stir in the diced tomatoes, tomato paste, cumin, chili powder, smoked paprika, and bay leaves. Cook for 2-3 minutes until the tomatoes break down slightly.

          Return the beef to the pot, followed by the beef broth. Stir everything together to combine.

            Bring the mixture to a boil, then reduce heat to low and cover. Simmer for about 2 to 2.5 hours, or until the beef is fork-tender.

              Feel free to check the pot occasionally and add more broth or water if the sauce thickens too much.

                Once the meat is tender, taste and adjust the seasoning if necessary. Remove bay leaves before serving.

                  Serve the carne guisada hot, garnished with chopped cilantro and avocado slices, accompanied by warm tortillas to soak up the delicious sauce.
