4 large carrots, peeled and grated

1/2 cup pistachios, shelled and roughly chopped

1 cup pomegranate seeds (from about 1 large pomegranate)

1/4 cup fresh mint leaves, finely chopped

2 tablespoons olive oil

2 tablespoons lemon juice

1 tablespoon honey or maple syrup

1/2 teaspoon cinnamon

Instructions
 

In a large mixing bowl, combine the grated carrots, chopped pistachios, and pomegranate seeds.

    In a small bowl, whisk together olive oil, lemon juice, honey (or maple syrup), and cinnamon until well blended.
