8 oz spaghetti or fettuccine

1 lb shrimp (peeled and deveined)

4 cloves garlic, minced

1 cup vegetable broth

1 tablespoon lemon zest

2 tablespoons fresh lemon juice

1/2 cup heavy cream

1/2 teaspoon red pepper flakes (adjust to taste)

3 tablespoons olive oil

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Grated Parmesan cheese (optional)

Instructions
 

Begin by cooking the pasta according to package instructions in salted boiling water. Drain and set aside, reserving about 1/2 cup of the pasta water.

    In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the minced garlic and red pepper flakes, sautéing until fragrant (about 1 minute).

      Add the shrimp to the skillet and season with salt and pepper. Cook shrimp for about 2-3 minutes on each side or until they turn pink and opaque. Remove shrimp from skillet and set aside.

        In the same skillet, pour in the vegetable broth and bring it to a simmer. Allow it to reduce for about 3-4 minutes.

          Stir in the lemon zest and lemon juice, followed by the heavy cream. Mix well and let it simmer for another 2 minutes to thicken slightly.

            Return the cooked shrimp to the skillet and gently toss to coat them in the creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water to reach your desired consistency.

              Add the cooked pasta to the skillet and toss everything together until well combined. Drizzle with the remaining tablespoon of olive oil and adjust seasoning to taste.

                Remove from heat and garnish with freshly chopped parsley and grated Parmesan cheese if desired.
