1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup heavy whipping cream

1/4 cup caramel sauce

1/2 cup pecans, chopped

1/4 cup butter, melted

1 tablespoon brown sugar

8 mini waffle cones

Fresh berries (strawberries, blueberries, or raspberries) for garnish

Instructions
 

In a mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.

    Gradually add the powdered sugar and vanilla extract, mixing until fully combined.

      In a separate bowl, whip the heavy cream until stiff peaks form.

        Gently fold the whipped cream into the cream cheese mixture until smooth. Be careful not to deflate the whipped cream.

          In a skillet over medium heat, combine chopped pecans, melted butter, and brown sugar. Stir continuously until the pecans are toasted and the sugar has caramelized slightly (about 3-4 minutes). Remove from heat and let cool.

            Take your mini waffle cones and start by drizzling caramel sauce inside each cone.

              Fill each cone with the cheesecake mixture, making sure to pack it tightly.

                Sprinkle the toasted pecans on top of the cheesecake filling in each cone.

                  Drizzle additional caramel sauce over the pecans for extra sweetness.

                    For garnish, add a few fresh berries on top of the cheesecake filling or arrange them around the cones on a serving platter.
