1 pound ground beef

1 cup shredded cheddar cheese

1 cup diced bell peppers (mixed colors)

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon chili powder

1 teaspoon cumin

Salt and pepper to taste

6 large flour tortillas

1 cup sour cream (for serving)

Fresh cilantro, chopped (for garnish)

Instructions
 

In a large skillet over medium heat, add the ground beef. Use a spatula to break it up as it cooks, allowing it to brown evenly for about 5-7 minutes. Drain excess fat if necessary.

    Add the chopped onion and bell peppers to the skillet, cooking for another 3-4 minutes until they soften.

      Stir in the minced garlic, chili powder, cumin, salt, and pepper. Cook for an additional 1-2 minutes until the garlic is fragrant.

        Remove the skillet from heat and sprinkle 1 cup of shredded cheddar cheese over the beef mixture. Stir gently until the cheese melts and combines with the beef.

          Warm the tortillas in a dry skillet or microwave until pliable.

            Lay a tortilla flat and spoon a generous amount of the cheesy beef mixture onto the center. Fold in the sides and roll up tightly to form a wrap.

              Repeat the process with the remaining tortillas and filling.

                Optionally, you can return the wraps to the skillet and toast on both sides for 2-3 minutes each until golden and crispy.

                  Serve the wraps warm with a side of sour cream and garnish with chopped cilantro.
