Ingredients

1 lb ground beef

1 cup shredded cheddar cheese

1/2 cup cream cheese, softened

1 tablespoon Italian seasoning

1 teaspoon garlic powder

1 teaspoon onion powder

6 large flour tortillas

1/2 cup diced bell peppers (mixed colors)

1/4 cup fresh parsley, chopped

Salt and pepper to taste

Olive oil for cooking

Instructions

Prepare the Filling: In a large skillet over medium heat, add the ground beef. Season with salt, pepper, garlic powder, and onion powder. Cook until browned, breaking it apart with a spatula (about 5-7 minutes). Drain excess grease, if necessary.

Mix the Cheeses: In a mixing bowl, combine the cooked beef, shredded cheddar, cream cheese, Italian seasoning, and diced bell peppers. Mix until well combined.

Assemble the Roll-Ups: Lay out a tortilla on a flat surface. Spoon approximately 1/3 cup of the beef and cheese mixture onto the center of the tortilla. Sprinkle a bit of chopped parsley on top for freshness.

Roll It Up: Carefully roll the tortilla tightly, tucking in the sides as you go to create a secure roll. Repeat this process with the remaining tortillas and filling.

Cook the Roll-Ups: In a large skillet or griddle, heat a bit of olive oil over medium-high heat. Add the roll-ups seam-side down and cook for about 3-4 minutes on each side, until they are golden brown and crispy.

Serve: Remove from the skillet and let them sit for a minute before slicing them in half diagonally.

Garnish and Enjoy: Serve warm with additional fresh parsley on top and your choice of dipping sauce, such as salsa or sour cream.
