2 cups cooked chicken, shredded

1 cup cooked rice or quinoa

1 cup broccoli florets, steamed

1 cup shredded cheddar cheese

1 can (10.5 oz) cream of chicken soup

1/2 cup milk

1/2 cup Greek yogurt

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

1/2 cup French fried onions (for topping)

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    In a large mixing bowl, combine the shredded chicken, cooked rice or quinoa, and steamed broccoli. Mix well.

      In a separate bowl, whisk together the cream of chicken soup, milk, Greek yogurt, garlic powder, onion powder, paprika, salt, and pepper until smooth.

        Pour the mixture over the chicken, rice, and broccoli, stirring until everything is well coated.

          Fold in half of the shredded cheddar cheese, mixing it in thoroughly.

            Transfer the mixture to a greased 9x13 inch (23x33 cm) baking dish and spread evenly.

              Top the casserole with the remaining cheddar cheese and a sprinkle of French fried onions.

                Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly, and the top is golden brown.

                  Once done, remove from the oven and let it cool for about 5 minutes before serving.

                    Garnish with chopped fresh parsley for a pop of color.
