Ingredients

1 pound breakfast sausage, crumbled

6 large eggs

2 cups shredded cheddar cheese

2 cups milk

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1 loaf of French bread, cubed (about 8 cups)

1 cup diced bell peppers (mix of colors)

1/2 cup chopped green onions

Cooking spray or butter for greasing

Instructions

Preheat the oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray or butter.

In a large skillet over medium heat, cook the crumbled sausage until browned and fully cooked, about 5-7 minutes. Drain excess grease and set aside.

In a large bowl, whisk together the eggs, milk, garlic powder, onion powder, black pepper, and salt until well combined.

Fold in the cubed French bread, cooked sausage, diced bell peppers, and half of the shredded cheddar cheese into the egg mixture, ensuring all bread pieces are soaked.

Pour the mixture into the prepared baking dish, spreading it evenly. Top with the remaining cheddar cheese and chopped green onions.

Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

Remove the foil and bake for an additional 15-20 minutes, or until the casserole is set in the middle and golden on top.

Let it cool for 5 minutes before slicing into squares for serving.
