1 lb Italian sausage, casings removed

1 cup long-grain white rice

2 cups chicken broth

1 cup shredded cheddar cheese

1 cup bell peppers (mixed colors), diced

1 medium onion, diced

2 cloves garlic, minced

1 teaspoon smoked paprika

½ teaspoon black pepper

½ teaspoon salt

2 tablespoons olive oil

2 green onions, chopped (for garnish)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.

    Add the minced garlic and diced bell peppers to the skillet. Cook for an additional 2-3 minutes until the peppers begin to soften.

      Push the vegetables to the side of the skillet and add the Italian sausage. Break it apart with a spatula and cook until browned and cooked through. Drain excess fat if necessary.

        Stir in the rice, smoked paprika, salt, and black pepper, mixing everything together.

          Pour in the chicken broth and bring the mixture to a gentle boil. Reduce the heat to low, cover the skillet, and let it simmer for 15-20 minutes, or until the rice has absorbed all the liquid.

            Remove the skillet from the heat and sprinkle the shredded cheddar cheese over the top. Cover again for about 2-3 minutes, allowing the cheese to melt.

              Once the cheese is melted and bubbly, fluff the rice and sausage mixture with a fork.

                Serve hot, garnished with chopped green onions.
