Ingredients

1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 cup buttermilk (or regular milk + 1 tablespoon lemon juice)

1 large egg

1/2 cup shredded cheddar cheese

1/4 cup finely chopped green onions

1/4 cup cooked and crumbled bacon (optional)

2 tablespoons olive oil or melted butter, for cooking

Sour cream and fresh herbs (like chives or parsley) for serving

Instructions

In a large mixing bowl, combine the flour, baking powder, baking soda, and salt. Whisk together until well mixed.

In another bowl, whisk together the buttermilk and egg until smooth.

Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. Be careful not to overmix.

Fold in the shredded cheddar cheese, chopped green onions, and crumbled bacon (if using) until evenly distributed.

Heat a non-stick skillet or griddle over medium heat and add a teaspoon of olive oil or melted butter.

Pour about 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface, about 2-3 minutes.

Flip the pancakes and cook for an additional 2-3 minutes, until golden brown and fully cooked through.

Repeat with the remaining batter, adding more oil or butter to the skillet as needed.

Serve the pancakes warm, topped with a dollop of sour cream and a sprinkle of fresh herbs for garnish.
