1 cup cream cheese, softened

1/2 cup powdered sugar

1 tsp vanilla extract

1 cup cherry pie filling (store-bought or homemade)

8 egg roll wrappers

2 tablespoons butter, melted

1 cup panko breadcrumbs

Oil for frying (vegetable or canola)

Whipped cream for serving (optional)

Fresh cherries for garnish (optional)

Instructions
 

In a mixing bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Beat with a hand mixer until smooth and creamy.

    Take one egg roll wrapper and place it on a clean surface with a corner pointing toward you.

      Spoon about 2 tablespoons of the cream cheese mixture onto the center of the wrapper. Top with 1 tablespoon of cherry pie filling.

        Fold the bottom corner of the wrapper over the filling, then fold the sides inward. Roll tightly toward the top corner, sealing the edges with a small dab of water to keep it from opening during frying.

          Repeat with the remaining wrappers and filling.

            In a shallow dish, pour panko breadcrumbs. Roll each filled egg roll in the breadcrumbs, ensuring they are evenly coated.

              Heat oil in a deep frying pan over medium heat. Once hot, carefully place 2-3 egg rolls in the oil at a time, frying until golden brown on all sides (about 3-4 minutes). Remove and drain on paper towels.

                Let the egg rolls cool slightly before serving.

                  Serve warm with a dollop of whipped cream on the side and garnish with fresh cherries if desired.
