1 lb (450g) boneless, skinless chicken breasts, diced

1 cup carrots, diced

1 cup celery, diced

1 small onion, finely chopped

3 cloves garlic, minced

4 cups chicken broth

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried rosemary

1/2 teaspoon salt

1/2 teaspoon black pepper

2 cups biscuit mix

1 cup milk

1/4 cup fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, sauté the onion, garlic, carrots, and celery over medium heat until softened, about 5 minutes.

      Add the diced chicken to the skillet and cook until it's no longer pink, around 5-7 minutes.

        Pour in the chicken broth and stir in the peas, thyme, rosemary, salt, and black pepper. Let the mixture simmer for about 10 minutes to meld the flavors.

          In a separate bowl, combine the biscuit mix and milk, stirring until just blended. The mixture will be thick.

            Transfer the chicken and vegetable mixture into a large casserole dish, spreading evenly.

              Dollop spoonfuls of the biscuit mixture over the top of the chicken filling; it doesn't need to cover the entire surface.

                Bake in the preheated oven for 25-30 minutes, or until the biscuit tops are golden brown and cooked through.

                  Remove from the oven and let it cool for a few minutes. Garnish with fresh parsley before serving.
