Chicken Lasagna Soup

1 lb (450g) boneless, skinless chicken breasts, diced

1 tablespoon olive oil

1 medium onion, finely chopped

3 cloves garlic, minced

1 can (28 oz) crushed tomatoes

4 cups chicken broth

2 teaspoons dried oregano

2 teaspoons dried basil

12 lasagna noodles, broken into pieces

1 cup ricotta cheese

1 ½ cups shredded mozzarella cheese

½ cup grated Parmesan cheese

Salt and pepper to taste

Fresh basil, for garnish (optional)

Instructions
 

In a large pot, heat olive oil over medium heat. Add the diced chicken breast and season with salt and pepper. Cook until browned and cooked through, about 5-7 minutes. Remove the chicken from the pot and set aside.

    In the same pot, add the chopped onion. Sauté for about 3-4 minutes until translucent. Add minced garlic and cook for an additional minute until fragrant.

      Pour in the crushed tomatoes and chicken broth. Stir in dried oregano and basil. Bring the mixture to a simmer.

        Once simmering, add the broken lasagna noodles to the pot. Let them cook for about 10-12 minutes or until they are al dente.

          While the noodles are cooking, in a separate bowl, mix the ricotta cheese with half of the mozzarella and Parmesan cheese. Set aside.

            After the noodles are cooked, return the chicken to the pot. Stir well to combine and let it simmer for an additional 5 minutes to heat through.

              To serve, ladle the soup into bowls. Add a dollop of the ricotta mixture on top and sprinkle with the remaining mozzarella and Parmesan cheese.

                Optional: Garnish with fresh basil for a touch of color and flavor.
