1 cup cooked chicken, shredded or diced

1/2 cup long-grain rice

1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

6 cups chicken broth

1 large lemon (juice and zest)

2 medium carrots, diced

1 cup baby spinach or kale, chopped

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Optional: a pinch of red pepper flakes for heat

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté for about 5 minutes until translucent. Stir in the minced garlic and cook for an additional minute until fragrant.

    Add the diced carrots and cook for 3-4 minutes until they begin to soften.

      Pour in the chicken broth and bring the mixture to a gentle boil.

        Stir in the rice and shredded chicken, and then reduce the heat to a simmer. Cook for about 15 minutes, or until the rice is tender.

          Add the lemon juice and zest, and stir well to combine all flavors. Follow with the chopped spinach or kale, letting it wilt into the soup for about 2-3 minutes.

            Season with salt and pepper to taste. If you prefer a kick, add a pinch of red pepper flakes.

              Serve hot, garnished with freshly chopped parsley.
