4 boneless, skinless chicken breasts

1 cup all-purpose flour

2 tablespoons olive oil

2 tablespoons unsalted butter

8 ounces cremini mushrooms, sliced

1 cup low-sodium chicken broth

2 tablespoons balsamic vinegar

2 cloves garlic, minced

1 teaspoon dried thyme

1 teaspoon dried oregano

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prep the Chicken: Start by seasoning the chicken breasts with salt, pepper, and dried thyme on both sides. Dredge the chicken in flour, shaking off excess.

    Cook the Chicken: In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Add the flour-coated chicken breasts and cook for about 5-7 minutes per side until golden brown and cooked through. Remove the chicken from the pan and set it aside on a plate.

      Sauté the Mushrooms: In the same skillet, add the remaining tablespoon of butter. When melted, add the sliced mushrooms and sauté until they are browned and tender, approximately 5 minutes. Stir in the minced garlic and cook for an additional minute until fragrant.

        Build the Sauce: Pour in the chicken broth and balsamic vinegar, stirring well to combine and scrape up any browned bits from the bottom of the skillet. Bring to a simmer.

          Combine & Thicken: Return the cooked chicken to the skillet and let it simmer in the sauce for about 5 minutes to absorb the flavors. If the sauce is too thin, you can whisk in a bit more flour mixed with water to thicken it to your desired consistency.

            Finish & Serve: Once the chicken is heated through, remove from heat. Adjust seasoning with salt and pepper as needed. Garnish with fresh chopped parsley before serving.
