2 chicken thighs, bone-in and skin-on

4 cups low-sodium chicken broth

2 cups water

1 medium onion, diced

2 carrots, sliced

1 celery stalk, diced

3 cloves garlic, minced

1 teaspoon dried thyme

1 tablespoon fresh parsley, chopped

1 bay leaf

Salt and pepper to taste

1 cup egg noodles

Juice of 1 lemon

Instructions
 

In a large pot, heat a tablespoon of olive oil over medium heat. Add the diced onion, carrots, and celery, and sauté until softened, about 5-7 minutes.

    Add the minced garlic and cook for another minute until fragrant.

      Season the chicken thighs with salt and pepper, then add them to the pot along with the thyme, bay leaf, chicken broth, and water. Bring to a boil.

        Once boiling, reduce the heat to low and simmer for 25-30 minutes, until the chicken is cooked through.

          Remove the chicken thighs from the pot and let them rest for a few minutes. While they cool, add the egg noodles to the soup and cook according to package instructions (usually about 6-8 minutes).

            Shred the chicken into bite-sized pieces, discarding the skin and bones. Return the shredded chicken to the pot along with the lemon juice and chopped parsley. Stir well to combine.

              Taste the soup and adjust seasoning with more salt, pepper, or lemon juice if desired.
