2 cups cooked chicken, shredded

8 small corn tortillas, cut into strips

1 can (15 oz) black beans, rinsed and drained

1 can (14 oz) diced tomatoes with green chilies

1 cup corn (fresh or frozen)

1 cup shredded cheddar cheese

1 cup shredded Monterey Jack cheese

1 teaspoon ground cumin

1 teaspoon chili powder

1 tablespoon olive oil

Salt and pepper, to taste

1/4 cup fresh cilantro, chopped for garnish

Optional: 1 jalapeño, sliced for extra heat

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large skillet, heat the olive oil over medium heat. Add the shredded chicken and cook for about 3-4 minutes until heated through.

      Stir in the black beans, diced tomatoes (with their juices), corn, ground cumin, chili powder, salt, and pepper. Allow the mixture to simmer for another 5 minutes.

        In a greased 9x13 inch baking dish, layer half of the tortilla strips on the bottom.

          Spoon half of the chicken and bean mixture over the tortillas.

            Lightly sprinkle half of the cheddar and Monterey Jack cheese over the chicken mixture.

              Repeat the layering process with the remaining tortillas, chicken mixture, and cheese.

                Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes.

                  Remove the foil and bake for an additional 15 minutes or until the cheese is bubbly and golden brown.

                    Once done, let the casserole sit for about 5 minutes before serving. Garnish with fresh cilantro and jalapeño slices if desired.
