1 cup yellow cornmeal

1 cup all-purpose flour

1 tablespoon baking powder

1/2 teaspoon salt

1 tablespoon sugar

1 cup milk

1 large egg

1/4 cup melted butter

1 cup cheddar cheese, shredded

1 cup cooked chili (homemade or canned)

8 hot dogs

8 wooden skewers

In a large mixing bowl, combine cornmeal, all-purpose flour, baking powder, salt, and sugar. Mix well.

    In a separate bowl, whisk together milk, egg, and melted butter until smooth.

      Gradually add the wet ingredients to the dry ingredients, stirring until just combined.

        Fold in the shredded cheddar cheese gently until evenly distributed in the batter.

          Preheat your oil in a deep fryer or a large pot to 350°F (175°C).

            Insert wooden skewers into each hot dog, piercing them about halfway through.

              Dip each hot dog into the cornmeal batter, ensuring they are fully coated.

                Carefully lower the coated hot dogs into the hot oil, frying in batches for about 4-5 minutes or until golden brown on all sides.

                  Use a slotted spoon to remove the corn dogs and drain them on paper towels.

                    Serve the corn dogs hot with a generous spoonful of chili on top and additional cheese for garnish.
