Ingredients

200g rice noodles

3 tablespoons sesame oil

6 cloves garlic, minced

2 red chilies, finely chopped (adjust for spice level)

1 tablespoon fresh ginger, grated

3 tablespoons soy sauce

2 tablespoons chili paste

1 tablespoon rice vinegar

1 cup bell peppers (red and yellow), julienned

1 cup carrots, julienned

2 green onions, chopped (for garnish)

Sesame seeds (for garnish)

Fresh cilantro (for garnish, optional)

Instructions

Cook the Noodles: Bring a pot of water to a boil and cook the rice noodles according to package instructions. Drain and rinse under cold water to stop the cooking process. Set aside.

Prepare the Sauce: In a small bowl, mix together soy sauce, chili paste, and rice vinegar. Set aside.

Sauté Aromatics: In a large pan or wok, heat the sesame oil over medium heat. Add the minced garlic, chopped red chilies, and grated ginger, sautéing for about 1-2 minutes until fragrant but not burnt.

Add Vegetables: Add the julienned bell peppers and carrots to the pan. Stir-fry for about 4-5 minutes until they are tender-crisp.

Combine Noodles and Sauce: Add the cooked rice noodles to the pan along with the prepared sauce. Gently toss everything together to coat the noodles evenly with the sauce and combine with the vegetables. Cook for an additional 2-3 minutes until everything is heated through.

Serve and Garnish: Remove from heat and serve hot. Garnish with chopped green onions, sesame seeds, and fresh cilantro if using.
