1 lb beef sirloin, thinly sliced against the grain

2 large onions, thinly sliced

2 bell peppers (any color), sliced

3 cloves garlic, minced

1 inch ginger, grated

3 tablespoons soy sauce (low sodium)

1 tablespoon oyster sauce (optional)

1 tablespoon cornstarch

2 tablespoons vegetable oil

1 tablespoon sesame oil

1 teaspoon sugar

Salt and pepper to taste

2 green onions, chopped for garnish

Sesame seeds for garnish (optional)

Instructions
 

In a medium bowl, combine the thinly sliced beef, cornstarch, soy sauce, oyster sauce (if using), and sugar. Mix well and let marinate for at least 15 minutes to enhance flavors.

    Heat 1 tablespoon of vegetable oil in a large wok or frying pan over high heat until shimmering.

      Add the marinated beef in a single layer, allowing it to sear for about 2-3 minutes without stirring. Flip the beef to cook the other side for another 1-2 minutes. Remove from the wok and set aside.

        In the same wok, add the remaining tablespoon of vegetable oil. Sauté the garlic and ginger for about 30 seconds until fragrant.

          Add the sliced onions and bell peppers to the wok, stir-frying for about 5 minutes until the vegetables are soft but still maintain some crunch.

            Return the beef to the wok, adding sesame oil, and toss everything together to combine well, cooking for an additional 2-3 minutes.

              Season with salt and pepper to taste, adjusting flavors as needed.

                Serve hot, garnished with chopped green onions and a sprinkle of sesame seeds if desired.
