Instructions
Start by peeling the bananas and cutting them into 1-inch thick slices. Place the banana slices on a parchment-lined baking sheet and freeze for about 30 minutes, or until firm.
While the bananas are freezing, prepare the chocolate coating. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in 30-second intervals, stirring in between, until the chocolate is completely melted and smooth.
Once the banana slices are firm, remove them from the freezer. Dip each slice into the melted chocolate, using a fork to help coat them evenly. Let the excess chocolate drip off before placing them back on the parchment-lined baking sheet.
While the chocolate is still wet, sprinkle the chopped nuts, shredded coconut, and a pinch of sea salt on top of each chocolate-covered banana slice. This adds texture and flavor to your bites.
Place the baking sheet back in the freezer for an additional 15-20 minutes or until the chocolate hardens completely.
Once the chocolate has set, transfer the banana bites to an airtight container and store them in the freezer until ready to serve.
