Instructions
In a large saucepan, melt the butter over low heat.
Once melted, add the mini marshmallows to the butter and stir continuously until completely melted and smooth.
Remove the saucepan from heat and stir in the vanilla extract.
Gradually add the Rice Krispies cereal to the marshmallow mixture, stirring until well coated.
Press the mixture into a greased 9x13-inch baking dish evenly. Allow to cool for about 30 minutes.
Once cooled, cut the treats into squares or rectangles and set aside.
In a microwave-safe bowl, combine the semisweet chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring in between, until melted and smooth.
Dip the bottom half of each Rice Krispie treat into the melted chocolate, letting excess drip off.
Place the chocolate-dipped treats on a parchment-lined tray.
While the chocolate is still soft, sprinkle with a tiny pinch of sea salt for an extra flavor boost (optional).
Allow the chocolate to set at room temperature or place in the refrigerator for quicker setting.
Notes
Arrange the treats on a decorative platter and serve with a side of melted chocolate for dipping.
