Ingredients
  

1 lb ground beef

1 cup cheddar cheese, shredded

1 medium onion, diced

1 green bell pepper, diced

2 tablespoons mayonnaise

1 tablespoon mustard

4 sandwich rolls or hero bread

Salt and pepper to taste

1 tablespoon olive oil

Optional toppings: lettuce, tomato, jalapeños

Instructions
 

Heat the olive oil in a large skillet over medium heat.

    Add the diced onions and green bell peppers to the skillet and sauté for about 3-4 minutes until they become soft and fragrant.

      Increase the heat to medium-high and add the ground beef, breaking it up with a spatula. Season with salt and pepper. Cook until browned, about 5-7 minutes.

        Reduce the heat to low and sprinkle the shredded cheddar cheese over the beef mixture. Cover the skillet for 2-3 minutes to allow the cheese to melt.

          In the meantime, lightly toast the sandwich rolls in a separate pan or under the broiler until golden brown.

            Mix the mayonnaise and mustard in a small bowl. Spread the mixture evenly on the toasted sides of the rolls.

              Pile the cheesy beef mixture onto the bottom half of each roll and add any optional toppings you like.

                Close the sandwich and press down slightly. Serve immediately while the cheese is melty and gooey!
