4 large eggs

1/2 cup milk (whole or almond)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg (optional)

1 tablespoon maple syrup

Butter or cooking spray for frying

Powdered sugar, for dusting
