4 pork sausages (or your choice of meat alternatives)

2 lbs potatoes (Yukon Gold or Russet), peeled and diced

1/2 cup butter, divided

1/2 cup whole milk

2 large onions, thinly sliced

2 tablespoons olive oil

2 tablespoons all-purpose flour

2 cups beef or vegetable broth

1 teaspoon Worcestershire sauce

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Prepare the Mashed Potatoes: In a large pot, add the diced potatoes and cover them with water. Bring to a boil over medium-high heat and then reduce to a simmer. Cook until tender, about 15-20 minutes. Drain the potatoes.

    Make the Mash: Return the drained potatoes to the pot, and add 1/4 cup of butter and the whole milk. Mash until creamy. Season with salt and pepper to taste. Set aside and keep warm.

      Cook the Sausages: In a large skillet, heat the remaining 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat. Add the sausages and cook until browned all over and cooked through, about 10-12 minutes. Remove from the skillet and keep warm.

        Caramelize the Onions: In the same skillet, add the sliced onions and the remaining olive oil. Cook on low heat, stirring frequently, until the onions are golden and caramelized, about 15-20 minutes. Remove the onions from the skillet and set aside.

          Prepare the Gravy: In the same skillet, add the flour and stir for about 1 minute to cook out the raw flour taste. Gradually whisk in the broth, ensuring there are no lumps. Add the Worcestershire sauce and bring to a simmer. Cook for about 5 minutes until the gravy thickens. Season with salt and pepper to taste.

            Serve: On a plate, create a mound of mashed potatoes, place the sausages on top, and pour the rich gravy over them. Garnish with the caramelized onions and a sprinkle of fresh parsley.
