200g dark chocolate (70% cocoa), chopped

3 tablespoons unsweetened cocoa powder

3 large eggs, separated

1/2 cup (120ml) heavy cream

1/4 cup (50g) granulated sugar

1 teaspoon vanilla extract

Pinch of salt

Whipped cream and chocolate shavings for garnish (optional)

Instructions
 

Begin by melting the dark chocolate. Place the chopped chocolate in a heatproof bowl and set it over a pot of simmering water (double boiler method). Stir occasionally until fully melted. Remove from heat and allow to cool slightly.

    In a separate bowl, sift the unsweetened cocoa powder and set aside.

      In another mixing bowl, use a hand mixer to beat the egg whites with a pinch of salt until soft peaks form. Gradually add in the granulated sugar and continue to beat until stiff, glossy peaks form. Set aside.

        In yet another bowl, beat the heavy cream until soft peaks form. Add the vanilla extract and continue to beat until it thickens but is still pourable.

          Add the egg yolks to the melted chocolate, stirring quickly to combine. Immediately fold in the sifted cocoa powder until well incorporated.

            Gently fold the whipped cream into the chocolate mixture until well blended. Take care not to deflate the mixture.

              Finally, gently fold in the beaten egg whites in three increments, ensuring that the mixture remains light and airy.

                Divide the mousse into serving cups or bowls and refrigerate for at least 2 hours to set.

                  Before serving, top with a dollop of whipped cream and garnish with chocolate shavings if desired.
