1 cup brown sugar

1/4 cup unsalted butter, melted

1 can (20 oz) sliced pineapple, drained (reserve juice)

maraschino cherries (about 10-12)

1 1/2 cups all-purpose flour

1 cup granulated sugar

1/2 cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1/2 cup pineapple juice (from reserve)

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

Instructions
 

Preheat your oven to 350°F (175°C).

    In a medium bowl, mix the brown sugar and melted butter until well combined. Spread this mixture evenly in the bottom of a 9-inch round cake pan.

      Arrange the drained pineapple slices on top of the brown sugar mixture, placing maraschino cherries in the center of each pineapple slice for a nice presentation. Set aside.

        In a separate large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.

          Beat in the eggs, one at a time, followed by the vanilla extract.

            In another bowl, combine the flour, baking powder, baking soda, and salt.

              Gradually add the dry mixture to the creamed mixture, alternating with the reserved pineapple juice. Start and end with the flour mixture, mixing just until combined.

                Pour the cake batter over the pineapple and cherries in the prepared pan, spreading it evenly.

                  Bake in the preheated oven for 35-40 minutes, or until a toothpick inserted into the center comes out clean.

                    Remove the cake from the oven and allow it to cool in the pan for about 10 minutes.

                      Carefully invert the cake onto a serving plate. Tap the bottom of the pan gently to release the cake and remove the pan.

                        Allow the cake to cool completely before slicing and serving.
