Ingredients

2 salmon fillets (about 6 oz each)

1 tablespoon coconut oil

1 cup coconut milk

2 tablespoons red curry paste

1 tablespoon fish sauce

1 teaspoon brown sugar

2 cloves garlic, minced

2 tablespoons unsalted butter

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Cooked jasmine rice (for serving)

Salt and pepper to taste

Instructions

Prep the Salmon: Pat the salmon fillets dry with paper towels and season generously with salt and pepper on both sides.

Cook the Salmon: In a large skillet, heat the coconut oil over medium-high heat. Once hot, add the salmon fillets, skin side down, and sear for about 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes, or until the salmon is just cooked through. Remove from the skillet and set aside.

Make the Coconut Curry Sauce: In the same skillet, reduce the heat to medium and add minced garlic. Sauté for about 30 seconds until fragrant. Then, stir in the red curry paste and cook for another minute, allowing the flavors to meld.

Incorporate the Coconut Milk: Pour in the coconut milk, fish sauce, and brown sugar. Stir well to combine, and allow the sauce to simmer for about 3-4 minutes until slightly thickened.

Add the Salmon: Return the cooked salmon to the skillet, spooning the curry sauce over the fillets. Simmer for an additional 2 minutes to heat through.

Finish with Garlic Butter: In a small saucepan, melt the butter over low heat. Once melted, stir in the lime juice. Drizzle this garlic butter over the salmon and curry sauce before serving.

Serve: Plate the salmon with generous portions of curry sauce over cooked jasmine rice. Garnish with freshly chopped cilantro.
