Instructions
Rinse the jasmine rice under cold water until the water runs clear. This removes excess starch and prevents the rice from being too sticky.
In your Instant Pot, combine the rinsed rice, coconut milk, water, sugar, and salt. Stir well to ensure all ingredients are evenly mixed.
Close the Instant Pot lid and seal the vent. Set it to Pressure Cook on high for 4 minutes.
Once the cooking time is complete, allow the pressure to naturally release for 10 minutes, then carefully quick-release any remaining pressure.
Open the lid and fluff the rice gently with a fork. Stir in the toasted shredded coconut, reserving a small amount for garnish.
Serve the coconut rice warm, garnished with a sprinkle of toasted coconut and fresh cilantro on top.
Notes
Use full-fat coconut milk for a creamier texture.
