1.5 lbs boneless, skinless chicken thighs

2 tablespoons olive oil

1 tablespoon apple cider vinegar

2 teaspoons chili powder

1 teaspoon smoked paprika

1 teaspoon ground cumin

1 teaspoon garlic powder

1 teaspoon onion powder

½ teaspoon salt

½ teaspoon black pepper

½ teaspoon cayenne pepper (adjust to taste)

1 tablespoon fresh lime juice

Fresh cilantro, chopped (for garnish)

Instructions
 

Marinate the Chicken: In a large bowl, combine the olive oil, apple cider vinegar, chili powder, smoked paprika, cumin, garlic powder, onion powder, salt, black pepper, cayenne pepper, and lime juice. Whisk until well combined.

    Add Chicken: Place the chicken thighs into the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to overnight for more flavor.

      Preheat Grill or Skillet: If using a grill, preheat to medium-high heat. If using a skillet, heat a non-stick skillet over medium-high heat with a drizzle of oil.

        Cook Chicken: Remove the chicken from the marinade and shake off any excess. If grilling, cook for 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C) and has nice grill marks. For skillet cooking, sear the chicken for 5-6 minutes on each side or until cooked through.
