Zest of 1 lime

Rinse the rice under cold water in a fine mesh strainer until the water runs clear. This will help remove excess starch and keep the rice fluffy.

    In a medium saucepan, heat the olive oil over medium heat. If using garlic, add it now and sauté for 1-2 minutes until fragrant, being careful not to burn it.

      Add the rinsed rice to the saucepan and toast it briefly for about 1-2 minutes, stirring constantly to ensure even cooking.

        Pour in the vegetable broth along with the salt, and bring it to a boil.
