2 cups dry pinto beans

6 cups water (for soaking)

4 cups low-sodium vegetable broth

1 medium onion, finely chopped

3 cloves garlic, minced

1 teaspoon cumin

1 teaspoon smoked paprika

1 tablespoon olive oil

Salt to taste

Fresh cilantro, chopped (for garnish)

Instructions
 

Rinse the dry pinto beans under cold water and pick out any debris or damaged beans.

    Place the rinsed beans in a large bowl, cover with 6 cups of water, and let soak overnight or for at least 6 hours.

      After soaking, drain and rinse the beans again.

        In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

          Stir in the minced garlic, cumin, and smoked paprika, and cook for an additional 1-2 minutes until fragrant.

            Add the soaked pinto beans and the vegetable broth to the pot. Bring to a boil, then reduce the heat to low.

              Cover the pot and simmer for about 1.5 to 2 hours, stirring occasionally, until the beans are tender.

                Once the beans are cooked, season with salt to taste.

                  For a creamier texture, you may mash a few beans with a potato masher in the pot.
