1tablespoonfresh herbs (like parsley or chives), finely chopped
1tablespoonsesame seeds (optional)
0.5teaspoongarlic powder (optional)
0.5cupwater (adjust as needed for dough consistency)
Instructions
In a mixing bowl, combine the cottage cheese, flour, baking powder, salt, and olive oil.
Mix until a soft dough begins to form. If the dough is too crumbly, add water gradually until you achieve a workable consistency.
Knead the dough on a lightly floured surface for about 2-3 minutes until smooth and elastic.
Divide the dough into 4-6 equal portions, rolling each into a ball.
Flatten each ball with your hands or a rolling pin into a round shape, about 1/4 inch thick.
If using, sprinkle sesame seeds or garlic powder on top and gently press them into the surface of the flatbread.
Heat a non-stick skillet or griddle over medium heat. Cook each piece of flatbread for 2-3 minutes on each side or until golden brown and cooked through.
Keep the cooked flatbreads warm under a clean kitchen towel while you finish the others.
Notes
Serve warm with a side of herbed yogurt dip or hummus for a delightful pairing.
