4 bone-in, skin-on chicken thighs

2 tablespoons olive oil

1 cup yellow onion, sliced

2 cloves garlic, minced

1 cup carrots, sliced

1 cup green beans, trimmed

1 cup cherry tomatoes, halved

1 tablespoon fresh thyme leaves

1 tablespoon Dijon mustard

1 cup low-sodium chicken broth

Salt and pepper to taste

Fresh parsley for garnish

Season the Chicken: Sprinkle the chicken thighs with salt and pepper on both sides.

    Sear the Chicken: In a large skillet over medium-high heat, heat the olive oil. Add the chicken thighs skin-side down and cook for about 5–7 minutes, until the skin is golden brown. Flip the thighs and cook for another 5 minutes. Remove from the skillet and set aside.

        Add Carrots and Green Beans: Stir in the sliced carrots and green beans, cooking for about 3-5 minutes until they start to soften.

          Incorporate the Tomatoes: Add the cherry tomatoes, fresh thyme, and Dijon mustard to the skillet, stirring to combine.

            Deglaze and Simmer: Pour in the chicken broth, scraping the bottom of the skillet to incorporate all the flavorful bits. Bring to a simmer.
