1 lb ground beef

1 tablespoon olive oil

1 tablespoon taco seasoning

1 can (15 oz) diced tomatoes with green chilies

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh or frozen)

8 oz cream cheese, cubed

2 cups shredded cheddar cheese

1 cup diced red bell pepper

1/4 cup chopped fresh cilantro (for garnish)

Tortilla chips (for serving)

Instructions
 

In a large skillet, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it apart as it cooks (about 5-7 minutes).

    Drain any excess grease from the skillet, then stir in the taco seasoning, diced tomatoes with their juices, black beans, and corn. Mix well.

      Reduce heat to low and add the cream cheese to the skillet. Stir constantly until the cream cheese melts and creates a creamy mixture.

        Gradually add the shredded cheddar cheese, stirring constantly until fully melted and smooth.

          Incorporate the diced red bell pepper and cook for another 2-3 minutes, allowing the peppers to soften slightly.

            Remove from heat and let cool for a minute. Transfer the queso to a serving bowl and sprinkle chopped cilantro on top for garnish.

              Serve hot with tortilla chips for dipping.
