1 cup lump crab meat, picked over for shells

1/2 cup breadcrumbs (preferably panko)

1/4 cup green onions, finely chopped

1/4 cup red bell pepper, finely diced

1 tablespoon Dijon mustard

1 tablespoon mayonnaise

1 teaspoon Old Bay seasoning

1 tablespoon lemon juice

8 egg roll wrappers

Vegetable oil for frying

Sweet chili sauce for dipping

Instructions
 

In a medium bowl, combine the lump crab meat, breadcrumbs, green onions, red bell pepper, Dijon mustard, mayonnaise, Old Bay seasoning, and lemon juice. Mix gently until well combined, being careful not to break up the crab meat too much.

    Place an egg roll wrapper on a clean surface with one corner facing you. Spoon about 2 tablespoons of the crab mixture onto the center of the wrapper.

      Fold the bottom corner of the wrapper over the filling, then fold in the sides, and roll it up to enclose the filling tightly. Seal the top corner with a little water. Repeat this process with the remaining wrappers and filling.

        Heat about 1 inch of vegetable oil in a large skillet over medium heat until hot. Carefully add the prepared egg rolls, a few at a time, being careful not to overcrowd the pan.

          Fry the egg rolls for about 3-4 minutes on each side or until they are golden brown and crispy. Remove them from the oil and place them on a paper towel-lined plate to drain excess oil.

            Serve the crab cake egg rolls warm with sweet chili sauce for dipping.
