500g fresh mushrooms (button, cremini, or a mix), sliced

1 medium onion, diced

3 cloves garlic, minced

2 tablespoons olive oil

1 tablespoon butter

4 cups vegetable broth

1 cup heavy cream (or coconut cream for a dairy-free option)

1 teaspoon fresh thyme (or ½ teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley for garnish

Instructions
 

Heat the olive oil and butter in a large pot over medium heat until melted.

    Add the diced onion to the pot and sauté for about 5 minutes, until translucent.

      Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.

        Add the sliced mushrooms to the pot, cooking for about 8-10 minutes until the mushrooms are browned and have released their moisture.

          Pour in the vegetable broth and thyme, and bring the mixture to a simmer.

            Let the soup simmer for 15 minutes to allow the flavors to meld.

              Remove the pot from the heat and use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half the soup and then stir it back into the pot.

                Return the soup to low heat and stir in the heavy cream. Season with salt and pepper to taste, allowing it to warm through without boiling.

                  Serve hot, garnished with fresh parsley.
