4 large onions, thinly sliced

3 tablespoons unsalted butter

1 tablespoon olive oil

3 cloves garlic, minced

1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)

4 cups vegetable broth

1 cup heavy cream

Salt and pepper to taste

Croutons for topping

Fresh chives, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil and butter over medium heat until melted.

    Add the sliced onions and cook slowly, stirring occasionally, until they become caramelized and golden brown, about 25-30 minutes.

      Stir in the minced garlic and thyme; cook for an additional 2-3 minutes until fragrant.

        Pour in the vegetable broth, bring to a boil, then reduce the heat and allow to simmer for 15 minutes.

          Using an immersion blender, puree the soup until smooth, or carefully transfer to a blender in batches and blend until creamy.

            Return the soup to the pot and stir in the heavy cream. Season with salt and pepper to taste.

              Heat gently until the soup is warmed through but do not boil.

                Serve hot, topped with croutons and freshly chopped chives.
