1 lb boneless, skinless chicken thighs, diced

1 tablespoon Cajun seasoning

2 tablespoons olive oil

1 small onion, diced

3 cloves garlic, minced

1 red bell pepper, diced

1 cup uncooked orzo pasta

4 cups chicken broth

1 cup heavy cream

1 cup shredded cheddar cheese

1 cup frozen peas

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a medium bowl, toss the diced chicken thighs with the Cajun seasoning until well-coated.

    In a large skillet over medium heat, heat the olive oil. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove chicken from the skillet and set aside.

      In the same skillet, add the diced onion and sauté for 2-3 minutes until translucent. Add the minced garlic and red bell pepper; cook for an additional 2 minutes until the pepper begins to soften.

        Stir in the uncooked orzo and sauté for another minute to lightly toast it.
